Stuffing Bites with Cranberry Sauce Pesto

Tired of leftovers what do you do? Consider Stuffing Bites with Cranberry Sauce. If you are like us, we don’t waste food. So when I saw this recipe I thought HEY that’s a good idea.  Repurposing Dressing.  

Now here in the South, we fry anything from Twinkies to Butter. Here at the Texas State Fair, they even have Fried Beer.  Yeah, That’s right. Fried Beer.  So naturally the idea of frying Dressing was perfect. 

Wrapped in Panko and deep fried to a golden brown.  Served with the Cranberry Sauce Pesto.  Well, consider your dressing gone. 

The Cranberry Sauce Pesto is a cup of cranberry sauce. A 1/2 teaspoon freshly ground black pepper and 1/2 cup walnuts. Now in the video I just used cranberry sauce mixed with Holiday Jam from American Spoon. I leave the link below for that.

I’ll tell you they were very good and a good way to eat up your leftover dressing. I will say they are well worth the effort. But stay tuned we have one more way of getting rid of Dressing and they are called Gobbler Bites. I hope you will try these and please let me know what you think.

Dressing Bites

A good way to repurpose your leftover Dressing

Ingredients
  

  • 2 cups Leftover stuffing/dressing
  • 3 eggs (divided)
  • 2 teaspoons milk
  • 1 cup seasoned bread crumbs or panko
  • 1 cup flour
  • 2-3 inches of cooking oil in a saucepot or a fryer

Cranberry Pesto: ( I just used cranberry sauce mixed with Holiday Jam)

  • 1 cup cranberry sauce
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup walnuts

Instructions
 

  • Preheat oil to 350 degrees F.
  • Mix leftover stuffing with 1 egg. In a small bowl whisk 2 eggs and milk. Coat each stuffing bite in flour then with the egg wash. Dredge in the bread crumbs until fully coated and set aside.
  • In a food processor blend cranberry sauce, pepper and walnuts and set aside.
  • Once oil is at temperature fry each piece of stuffing until golden brown about 4 minutes. Drain on a paper towel and serve with cranberry pesto or your favorite cranberry sauce.
