Cuisine American
- 2 cups Leftover stuffing/dressing
- 3 eggs (divided)
- 2 teaspoons milk
- 1 cup seasoned bread crumbs or panko
- 1 cup flour
- 2-3 inches of cooking oil in a saucepot or a fryer
Cranberry Pesto: ( I just used cranberry sauce mixed with Holiday Jam)
- 1 cup cranberry sauce
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup walnuts
Preheat oil to 350 degrees F.
Mix leftover stuffing with 1 egg. In a small bowl whisk 2 eggs and milk. Coat each stuffing bite in flour then with the egg wash. Dredge in the bread crumbs until fully coated and set aside.
In a food processor blend cranberry sauce, pepper and walnuts and set aside.
Once oil is at temperature fry each piece of stuffing until golden brown about 4 minutes. Drain on a paper towel and serve with cranberry pesto or your favorite cranberry sauce.
