Strawberry Surprise with Pie Crusties
Strawberry Surprise. This is my own little creation. Strawberries layered with Whip Cream and my Pie Crusties. What are Pie Crusties you ask? A Pie Crusty is simply my Pie Crust, buttered and sugared. Then slightly browned to give it a sugary glaze. Now for this strawberry dessert, I don’t use cinnamon. But when I make other desserts like Peaches or maybe Blueberries I do. And of course for Apples. This is such as simple and delicious dessert. This dessert is requested frequently.
I’ve included my Pie Crust recipe here as well. I think you’ll find it interesting. I use Part Vodka, which makes the crust super flaky and trust me there is no alcohol aftertaste at all as it evaporates completely. It’s this evaporative process that separates the crust into layers. It really is special. Of course, it is optional, but it’s not. You can use all water.
You will want to prepare your strawberries beforehand and place them in the refrigerator preferably overnight. The sugar will draw out the moisture and concentrate at the bottom with the sugar making a kind of syrup. You will drizzle this syrup over the dessert as you build it.
To build is simple. You start with a dollop of Whip Cream then add a few strawberries. Layer in your pie crusties, and try not to eat very many in the process. Which is hard not to do. And from there its Strawberries, Whip Cream, Crusties, Syrup, until your Cup runneth over. Strawberry Surprise is a wonderful refreshing dessert and I know your family is going to love it.
Strawberry Surprise with Pie Crusties
Ingredients
- 2 pints of fresh sliced strawberries
- 1/2 cup sugar
- 2 cups whipped cream
- Double pie crust baked-refer to my Flaky Pie Crust recipe
- 1/2 Stick Butter, Melted
- 1/4 Cup Sugar or To Taste
Instructions
Making the Strawberry Syrup
- Sprinkle strawberries with sugar and place in the refrigerator for several hours or overnight.
Making the Crusties
- Preheat oven at 425F or 218C
- Place pie dough on a work surface and roll out to 1/8 of an inch maybe a little more.
- Place rolled out dough on a baking sheet and place in a preheated oven at 425 degrees or 218 celsius for 8 minutes.
- Remove from the oven and brush with melted butter. Sprinkle Sugar to your taste, but I am very liberal with the sugar.
- Back in the oven for an additional 10 minutes or until lightly browned.
- Remove from oven and let it cool completely before building your Strawberry Surprise.

Flaky Pie Crust
Equipment
- 1 Large Bowl or Double the size of the Dough. I use an 8 qrt plastic bowl with a tight-fitting lid.
Ingredients
- Double Pie Crust 11”
- 3 cups plus 6 Tbls Gold Medal flour 479.25g
- 1-1/2 cups Crisco 288g
- 1-1/2 teaspoons salt
- 5 Tbls ice cold water
- 5 Tbls ice cold Vodka optional may use all ice water
Instructions
- Use a large bowl with a lid that seals.
- Combine flour, salt and crisco.
- Using your hands and a pastry cutter, work the ingredients until it resembles cornmeal.
- Add the cold water and cold vodka. Stir gently one time.
- Seal the lid on the bowl and shake it until you hear it thump.
- Remove lid and gently pull any dough on the sides together and combine with larger portion of dough.
- Divide in half. It’s ready to roll out for pie pans or pie crusties.
