Squash Casserole With Buttery Ritz Cracker Topping

This is a very good squash dish. Going to a church supper? Just double the recipe. My husband’s 97 year old Aunt (Aunt Niney) gave me this recipe.
Squash Casserole with Buttery Ritz Cracker Topping
My 97 year old Aunt gave me this recipe.
Ingredients
- 2-2.5 lbs squash I like yellow squash
- 1/2 cup butter 1 stick
- 3/4 cup chopped onion
- 1/2 cup red bell pepper
- 15 Ritz crackers crumbled
- 2 eggs beaten
- 1/2 teaspoon Tabasco
- 1 cup Grated sharp white cheddar I like about 1/2 cup more
- Salt and pepper to taste
- Topping:
- 1-1/2 cups 1 sleeve Ritz crackers, crumbled
- 1/2 1stickcup butter, melted
Instructions
- Preheat oven to 350F
- Slice squash, sauté with onion and bell pepper in butter until soft. Add crackers, eggs and grated cheese. Add tabasco(optional).
- Pour into a 2 quart dish, top with remaining crackers mixed with butter.
- Bake until hot and bubbly.Approximately 20-30 mins.
