Squash Casserole with Buttery Ritz Cracker Topping
My 97 year old Aunt gave me this recipe.

- 2-2.5 lbs squash I like yellow squash
- 1/2 cup butter 1 stick
- 3/4 cup chopped onion
- 1/2 cup red bell pepper
- 15 Ritz crackers crumbled
- 2 eggs beaten
- 1/2 teaspoon Tabasco
- 1 cup Grated sharp white cheddar I like about 1/2 cup more
- Salt and pepper to taste
- Topping:
- 1-1/2 cups 1 sleeve Ritz crackers, crumbled
- 1/2 1stickcup butter, melted
Preheat oven to 350F
Slice squash, sauté with onion and bell pepper in butter until soft. Add crackers, eggs and grated cheese. Add tabasco(optional).
Pour into a 2 quart dish, top with remaining crackers mixed with butter.
Bake until hot and bubbly.Approximately 20-30 mins.
