Squash Casserole with Buttery Ritz Cracker Topping

My 97 year old Aunt gave me this recipe.

Ingredients
  

  • 2-2.5 lbs squash I like yellow squash
  • 1/2 cup butter 1 stick
  • 3/4 cup chopped onion
  • 1/2 cup red bell pepper
  • 15 Ritz crackers crumbled
  • 2 eggs beaten
  • 1/2 teaspoon Tabasco
  • 1 cup Grated sharp white cheddar I like about 1/2 cup more
  • Salt and pepper to taste
  • Topping:
  • 1-1/2 cups 1 sleeve Ritz crackers, crumbled
  • 1/2 1stickcup butter, melted

Instructions
 

  • Preheat oven to 350F
  • Slice squash, sauté with onion and bell pepper in butter until soft. Add crackers, eggs and grated cheese. Add tabasco(optional).
  • Pour into a 2 quart dish, top with remaining crackers mixed with butter.
  • Bake until hot and bubbly.Approximately 20-30 mins.
