Red White and Blueberry Pie
A Red White and Blueberry Pie! I’ve started the process of looking for Summer Time recipes and I found this very Patriotic Pie. I was going to wait until the 4th of July to post but thought to myself well Memorial Day is right around the corner so why not now. The Red is Raspberry the White is a cream cheese filling and of course, the Blue is blueberries in an 11” Pie crust. And oh man is it good. The Raspberries are slightly tart but the Cream Cheese and Blueberries more than balance it out. I find this pie to be extremely refreshing and perfect for any summer event you may have planned.
Red White and Blueberry Pie
Ingredients
- 1 Prebaked 9” deep dish pie crust completely cooled
Blue Part of Pie:
- 3/4 Cup sugar
- 3 Tbls cornstarch
- 1 Pinch of salt
- 2 Tbls plus 1 tsp Blue Berry Gelatin jello May use a drop or two of gel dark blue food coloring if you wish for a darker blue.
- 3/4 Cups water
- 1 tsp lemon juice
- 1 Pint Fresh or frozen blueberries
Red Part of Pie:
- 3/4 Cup sugar
- 3 Tbls cornstarch
- 2 Tbls plus 1 teaspoon raspberry gelatin jello
- 1 Pinch of salt
- 1 pint fresh or frozen unsweetened raspberries
Cream Cheese Fill:
- 6 ounces cream cheese softened
- 1/3 Cup confectioners’ sugar plus 2 Tbls
- 2 Cups whipped topping
- 1 tsp vanilla
Instructions
- Blue:
- In a medium saucepan, combine the sugar, cornstarch and salt. Mix well. Combine with water until smooth.
- Bring to a boil; cook and stir until thickened, about 2 minutes.
- Stir in Blue Berry gelatin until dissolved.
- Stir blueberries and lemon juice into gelatin mixture spread over crust.
- Chill until set. I put in freezer for an hour.
- White:
- Meanwhile, in a small bowl, beat cream cheese and confectioners' sugar until smooth.
- Fold in whipped topping and vanilla; spread over blueberry layer.
- Refrigerate until filling is set, about 2 hours
- Red:
- In a medium saucepan, combine the sugar, cornstarch and salt. Mix well.
- Combine with water until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes.
- Stir in raspberry gelatin until dissolved.
- Stir in raspberries.
- Carefully spread raspberry mixture over cream cheese layer. Chill for at least 4-6 hours.

The white element of the pie is usually a creamy and smooth mixture that serves as a delightful contrast to the fruity layers. This can be achieved by using a variety of ingredients, such as whipped cream, vanilla pudding, or a mixture of cream cheese and powdered sugar.
Of course you could always substitute Strawberries in place of Raspberries. Your choice and either works nicely.
