This is a dish that has become a family tradition for Thanksgiving, Christmas, Easter, or next Tuesday. Lol! It’s really a fantastic sensation with the velvety smooth sweet potatoes, and the crunch of the coconut and pecans. It really is SIN-sational.
Praline Topped Sweet Potato Casserole
Our family's favorite Sweet Potatoe Side Dish for Thanksgiving
Ingredients
Filling:
- 5 Cups Cooked Mashed Sweet Potatoes (NOTE: Bake sweet potatoes the day before and measure out 5 cups and refrigerate until ready to use)
- 1 Stick Butter, Melted
- 1 tsp Cinnamon
- 2 Eggs, Beaten
Topping:
- 1 Cup Chopped Pecans
- 1 Cup Coconut
- 1 Stick Melted Butter
- 1/3 Cup Flour
- 3/4 Cup Packed Light Brown Sugar
Instructions
- Mix the sweet potatoes, cinnamon, 1 stick of melted butter, and 2 beaten eggs together. Place in buttered 8 x 8 casserole dish.
- Mix 1 cup chopped pecans, 1 cup coconut, 1 stick melted butter, 1/3 cup flour, and ¾ cup packed brown sugar. Place on top of potatoes and bake at 350 degrees for about 35 minutes.
