Banana Bread with Salted Peanut Streusel
Ingredients
Streusel:
- 2 Tbls unsalted butter (melted plus more for the pan)
- 1/4 cup all purpose flour
- 1/4 cup packed dark brown sugar
- 1/4 rounded cup chopped salted peanuts
- Pinch of kosher salt
Bread:
- 1 1/2 cups of all purpose flour (213g)
- 1/2 tsp of baking powder
- 1/2 tsp baking soda
- 3/4 tsp kosher salt
- 3 large (very ripe bananas, mashed (1-1/2 cups))
- 1/2 cup packed dark brown sugar
- 1/2 cup granulated sugar
- 4 Tbls unsalted butter (melted)
- 2 large eggs
- 1 tsp vanilla
Instructions
- Preheat the oven to 350° F. Butter an 8 1/2 x 4 1/2“ loaf pan and line with parchment paper, leaving a 2 inch overhang on the two long sides.
Make the streusel:
- In a medium bowl, whisk together the flour and brown sugar until combined.
- Add the butter, peanuts and salt stir with a fork until clumps form, then chill. (I place in the freezer while making the bread.
Make the bread:
- In a large bowl, whisk together the flour, baking powder, baking soda and salt.
- In a medium bowl, whisk together the bananas, sugar, butter, vanilla and eggs until combined.
- Add the banana mixture to the flour mixture and stir until combined.
- Transfer to the prepared pan and smooth the top.
- Sprinkle with the streusel and bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes.
- Cool in the pan on a wire rack, for 10 minutes, then use the overhangs to remove from the pan.
- Cool completely on a wire rack.
