Banana Bread with Salted Peanut Streusel

This recipe combines the wholesome goodness of ripe bananas with the irresistible crunch of a salted peanut topping, creating a delightful symphony of flavors and textures.

Ingredients
  

Streusel:

  • 2 Tbls unsalted butter (melted plus more for the pan)
  • 1/4 cup all purpose flour
  • 1/4 cup packed dark brown sugar
  • 1/4 rounded cup chopped salted peanuts
  • Pinch of kosher salt

Bread:

  • 1 1/2 cups of all purpose flour (213g)
  • 1/2 tsp of baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp kosher salt
  • 3 large (very ripe bananas, mashed (1-1/2 cups))
  • 1/2 cup packed dark brown sugar
  • 1/2 cup granulated sugar
  • 4 Tbls unsalted butter (melted)
  • 2 large eggs
  • 1 tsp vanilla

Instructions
 

  • Preheat the oven to 350° F. Butter an 8 1/2 x 4 1/2“ loaf pan and line with parchment paper, leaving a 2 inch overhang on the two long sides.

Make the streusel:

  • In a medium bowl, whisk together the flour and brown sugar until combined.
  • Add the butter, peanuts and salt stir with a fork until clumps form, then chill. (I place in the freezer while making the bread.

Make the bread:

  • In a large bowl, whisk together the flour, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the bananas, sugar, butter, vanilla and eggs until combined.
  • Add the banana mixture to the flour mixture and stir until combined.
  • Transfer to the prepared pan and smooth the top.
  • Sprinkle with the streusel and bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes.
  • Cool in the pan on a wire rack, for 10 minutes, then use the overhangs to remove from the pan.
  • Cool completely on a wire rack.
