Banana Bread with Salted Peanut Streusel

Streusel:
- 2 Tbls unsalted butter (melted plus more for the pan)
- 1/4 cup all purpose flour
- 1/4 cup packed dark brown sugar
- 1/4 rounded cup chopped salted peanuts
- Pinch of kosher salt
Bread:
- 1 1/2 cups of all purpose flour (213g)
- 1/2 tsp of baking powder
- 1/2 tsp baking soda
- 3/4 tsp kosher salt
- 3 large (very ripe bananas, mashed (1-1/2 cups))
- 1/2 cup packed dark brown sugar
- 1/2 cup granulated sugar
- 4 Tbls unsalted butter (melted)
- 2 large eggs
- 1 tsp vanilla
Make the streusel:
In a medium bowl, whisk together the flour and brown sugar until combined.
Add the butter, peanuts and salt stir with a fork until clumps form, then chill. (I place in the freezer while making the bread.
Make the bread:
In a large bowl, whisk together the flour, baking powder, baking soda and salt.
In a medium bowl, whisk together the bananas, sugar, butter, vanilla and eggs until combined.
Add the banana mixture to the flour mixture and stir until combined.
Transfer to the prepared pan and smooth the top.
Sprinkle with the streusel and bake until a toothpick inserted in the center comes out clean, 50 to 60 minutes.
Cool in the pan on a wire rack, for 10 minutes, then use the overhangs to remove from the pan.
Cool completely on a wire rack.
