Waldorf Salad With Curried Peanuts And Coconut
This sweet-savory side dish shies away from the typical flavors that come with Thanksgiving dinner. Our Waldorf salad recipe has super crisp flavors—perfect for taking a break from all the heavy stuff.
MAKES:5 1/2 CUPS TOTAL TIME:20 MINUTES
INGREDIENTS
- ½ cup Spanish peanuts
- 1 ½ tsp. curry powder
- 2 tsp. vegetable oil
- ½ cup plain yogurt
- 3 Tbsp. sugar
- 1 Tbsp. fresh lemon juice
- Salt and cayenne pepper to taste
- 2 cups Braeburn apple, diced
- 1 ½ cups seedless red grapes, halved
- 1 cup celery, chopped
- ½ cup sweetened shredded coconut
INSTRUCTIONS
1.Sauté peanuts and curry powder in oil in a small skillet over medium heat until peanuts are golden, about ⏰ 2 minutes. Transfer peanuts to a plate to cool.
2.Whisk together yogurt, sugar, lemon juice, salt, and cayenne in a medium bowl. Stir in apple, grapes, celery, coconut, and peanuts, including any residual oil left on the plate. Chill salad until ready to serve.
