Ingredients

Warning: Be careful when adding the Liquor.

  • 2 Tbls butter
  • 2 Tbls olive oil
  • 12 chicken legs or thighs (bone in, skin on)
  • 1 yellow onion (diced)
  • 1 1/2 cups peach whisky or peach brandy
  • 4 cups barbecue sauce (I used Salt Lick original)
  • 1 cup peach preserves
  • 2 Tbls Worcestershire sauce
  • 4 peaches (pitted and sliced into 8 slices each OR 2-15oz cans of sliced peaches.,drained. Frozen can also be used)
  • Mashed potatoes (for serving)
  • 3 green onions (sliced thin, for serving)
  • Chopped fresh parsley (for serving)

Instructions

  • Heat the butter and olive oil in a 7 quart Dutch Oven over medium-high heat. Add the chicken pieces and cook until golden brown on all sides, about 5 minutes. Remove from the pot and set aside.
  • Add the onions to the same Dutch Oven and stir and cook over medium heat until translucent, about 3 minutes. Pour in the whisky slowly taking care if you are cooking over an open flame. Cook for 3 minutes or so, allowing the whisky to cook and reduce.
  • Grab your favorite bottled barbecue sauce and pour it into the pan. Add the peach preserves, and Worcestershire sauce , then whisk to combine. Add the chicken back to the pan. Cover and cook over medium heat for 45 minutes.
  • Remove the lid and add the peaches. (See Note Below) Continue to cook with the lid off until the chicken is tender and falling off the bone the sauce is beautiful and rich and the peaches are soft (about an additional 45 minutes). That's how you know it's done! Be sure to spoon off excess fat and oil.
  • Serve the chicken over a big mound of mashed potatoes, spooning the sauce over the whole thing. Sprinkle with green onions and parsley, then watch your loved ones gobble it up.

Notes

NOTE: The one thing I would change is to wait and put the peaches in the second 45 minutes of cooking so they don’t fall completely apart.
This recipe can be divided in half if you choose and don’t want this much, but it freezes well for another meal.
WARNING: Any Liquor you choose, Brandy, Cognac or Whiskey will be volatile and may flame up.  So be careful and add slowly to the middle of the pot.  I have a gas stove so I turn off the flame just to be safe.
