Mom’s Coconut Butterball Cookies

Coconut Butterball Cookies.  Another short bread type cookie with Coconut dusted liberally with powdered sugar.  This cookie is not overly sweet but just the right amount to satisfy any sweet tooth.

Another great gift Idea for any occasion but especially for Christmas.   Along with the Fudge, Toffee, and cookie videos we made earlier.

Yield: About 4 dozen cookies

Ingredients

  • 1 cup soft butter
  • ¼ cup sifted powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 ½ cups flaked sweetened coconut
  • Powdered sugar

Directions

Cream butter until light and fluffy; gradually add sugar and vanilla and mix well. Blend in flour and coconut. Roll into one-inch balls and place on an ungreased cookie sheet. Place cookie sheet in the refrigerator for 15 minutes. Bake at 350 degrees or until delicately browned, 13-15 minutes. While still warm, roll in powdered sugar. Do not overbake or brown too much!

EXCELLENT COOKIE!!! Mom made them a lot and I’ve been making them for years to take to the office and to give to friends for the holidays.
