Mini Pecan Pie Muffins
Mini Pecan Pie Muffins are a favorite in my home. Just right for Brunch or an afternoon snack with coffee or tea.Brown sugar pecans and a touch of vanilla make these little darlings are a delight. They are a real treat to have around, but just a warning they don’t stay around for very long.
Mini Pecan Pie Muffins
Ingredients
- 1 Cup light brown sugar
- ⅔ Cup Butter softened (10.5 Tablespoons)
- 2 Eggs
- 2 tsp Vanilla extract or vanilla bean paste
- Pinch Of Salt
- ½ Cup All-Purpose Flour
- 1 Cup Pecans
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Lightly Grease 24 mini muffin cups.
- Beat brown sugar, butter, eggs, and vanilla extract together in a bowl using an electric mixer until smooth and creamy.
- Mix flour and pecans together in a bowl; stir into creamy mixture until batter is smooth. Spoon batter into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 11 to 14 minutes.
