Gobbler Cakes
Again what to do with leftover dressing. Well here is yet another great idea. Gobbler Cakes! And folks these little cakes are fantastic. I mean the Stuffing Bites were good, but these are awesome.
With turkey and cranberries which is optional mixed with one egg mayonnaise and a baking mix like bisquick. Breaded and fried with Panko they are so good.
Now if I had some leftover turkey gravy; that really would have been special. I’ll remember that next time. And the crunch. I love that crunch with the Panko. And I also love we can fry them in a skillet with just a little oil. And it was easy which is always a plus for me. So yes this recipe is a keeper.

Gobbler Cakes
Ingredients
- 3 large eggs
- 2 cups cooked stuffing/dressing
- 1-1/4 cups finely chopped cooked turkey
- 1/2 cup baking mix (I used Bisquick)
- 1/2 cup dried cranberries (optional)
- 1/4 cup mayonnaise
- 1 cup panko
- 1 cup flour
- 1/3 cup canola oil (Use additional if needed)
- Cranberry sauce and turkey gravy (optional)
Instructions
- In a large bowl mix stuffing, turkey and cranberries(optional). Add baking mix and mix well. Add one egg and mayonnaise. Shape into eight 1/2-in.-thick patties. Bread by first rolling in flour; then egg; then panko.
- In a large skillet, heat oil over medium heat. Add patties in batches; cook 3-4 minutes on each side or until golden brown. Serve warm, with cranberry sauce and gravy if desired.
