French Silk Pie

Ingredients

9”pie:

  • 9” pre baked pie shell or an Oreo pie crust
  • 1 cup sugar
  • 171g or 3/4 cup butter(NOT margarine)
  • 3 squares(3oz) unsweetened chocolate, melted and cooled
  • 1-1/2 teaspoons vanilla
  • 3 eggs
  • Whip cream for topping

11” pie:

  • 11” pre baked pie shell
  • 1-1/2 cups sugar 
  • 256g butter(1 stick + 1 tablespoon)
  • 4-1/2 squares (4-1/2oz) unsweetened chocolate, melted and cooled.
  • 2-1/4 teaspoons vanilla
  • 4 eggs + 1 egg yolk
  • Whip cream for topping

Instructions:

Using an electric mixer with the paddle attachment, cream sugar and butter about 5 minutes on medium speed. Blend in cooled chocolate and vanilla.

Add eggs, one at a time, beating on medium speed after each addition and scraping the sides of bowl after each addition. The filling should be very smooth and not grainy.  If it is grainy, continue mixing.

Pour into a baked pie shell and smooth. Chill for 6 hours or overnight until set.

Garnish with whipped cream and chocolate curls 

NOTE: The results from using anything but butter are so unsatisfactory that ONLY butter is recommended 

Oreo crust 9” pie:

Ingredients:

  • 24 Oreos (2 cups crumbs)DO NOT USE DOUBLE STUFF OREOS
  • 5 Tablespoons salted butter, melted

Instructions:

Process Oreos in a blender or food processor until you have fine crumbs. Transfer to a bowl and add melted butter. Mix until all the crumbs are moistened.

Scoop the crumbs into a 9” pie plate and press firmly in an even layer on the bottom and up the sides of pie plate.

Bake at 350F for 8-10 minutes.  Cool completely on a wire rack 

NOTE: People with a compromised immune system, small children and pregnant women should avoid raw eggs.
