Easy Chicken and Grape Salad
This is a quick and easy salad to make and take to a potluck or any social gathering. it’s a refreshing combination of, sour cream, mustard, celery, dill pickles, and grapes mixed with chicken. Then add to this, toasted Pecans. I like to hit it with a few sprinkles of Cayenne pepper just to give it a little kick. But not too much.
Makes approximately 9-1 cup servings
Ingredients:
- 1 cup of Mayo
- 1/2 cup of sour cream
- 1/4 cup mustard
- 6 cups chopped chicken
- 1/2 cup red onion
- 1/2 cup celery
- 1/2 cup crispy dill pickles or 2 Tbls Fresh Dill
- 1 1/3 cups pecans(lightly toasted)
- 1 1/3 cups grapes(or cranberries or apple)
- Cayenne pepper to taste
Directions:
- Lightly Toast the Pecans on Medium Heat for about 2-3 minutes
- Mix Mayo, Sour Cream, & Mustard in a small bowl
- In a large bowl add Chicken, Red Onion, Celery, Pickles or Dill, pecans, and Mix well
- Add Grapes. If the grapes are large in size cut in half.
- Add the Mayo Mix to the Large bowl and mix well
- Add Cayenne, salt & pepper to taste.
- Serve Cold
Note: I used a large rotisserie chicken, you can use just chicken breast as well.
