Creamy Pesto Pasta with Garlic Shrimp
My sister-in-law made this for a get-together and it is absolutely delicious. Thank you Sharon for this recipe. Its very tasty and easy.
Creamy Pesto Pasta with Garlic Shrimp
Pasta and Shrimp are forever a great combination and this recipe with Creamy Pesto Pasta and Charred Garlic Shrimp is one of my favorite recipes. Thanks to my Sister-In-Law Sharon for this recipe.
Ingredients
Ingredients for the Marinade
- 2 Pounds large shrimp peeled and deveined
- 1 Tsp paprika I used Hungarian paprika
- 1 Tablespoon sliced fresh garlic
- 1 Teaspoon Italian seasoning
- 1 Tablespoon fresh lemon juice
- 2 Tablespoons olive oil
- 1/2 Teaspoon black pepper
- 1 Teaspoon dried basil or 1 Tablespoon chopped fresh basil
- 1 Tablespoon brown sugar
Ingredients for the Pesto Pasta
- 1 Pound linguine or angel hair pasta, prepare per package directions
- 1/2 Cup (1 Stick) Butter
- 1 Tablespoon Garlic, Minced
- 1/4 Cup shallots, minced
- 2 Cups Heavy Cream
- 1/2 Teaspoons Black Pepper
- 1 Cup Fresh Grated Parmesan Cheese
- 1/3 Cup Basil Pesto, I used a little bit more
- 2 Pounds Grilled Shrimp
Instructions
Directions for the Marinade
- Mix all of the above ingredients for the marinade in a bag. Then marinate for a minimum of 20 minutes in the refrigerator. Remove the shrimp from the marinade and grill over hot coals to char on all sides or on high heat 5-6 minutes. Then set aside.
Directions for the Creamy Pesto Pasta
- In a large skillet melt butter over medium heat. Add shallots; cook until shallots soften, 2-3 minutes. Add garlic and cook 1 more minute. Stir in the cream and pepper. Cook 6 to 8 minutes, stirring constantly.
- Stir in parmesan cheese until thoroughly mixed in and melted.
- Blend in pesto and cook 3 to 5 minutes or until thickened. Serve over pasta and shrimp. Garnish with chopped chives or fresh basil, chopped.
