Cheddar, Chive, Bacon Quick Bread
Cheddar Chive Bacon Quick Bread! Who doesn’t love a good Quick Bread? Well, this bread is way beyond good and popping with flavor. With Cheddar and Parmesan Cheese, Chives, and oh yeah, Bacon. Infused with butter and buttermilk. Served warm this bread will compliment just about any meal you put with it. Soups, Salads, a good ole pot of beans, it can even stand alone. It’s that good. And it’s so easy to make.
Cheddar Chives Bacon Quick Bread
A quick and easy Quick Bread made with Cheddar Chives Bacon oh and Parmesan. Goes with just about anything or nothing at all.
Equipment
- Nonstick spray, for the pan
Ingredients
- 1 1/2 cups of all purpose flour 213g
- 1 Tbls of baking powder
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper plus more for sprinkling
- 2 large eggs
- 1/2 cup buttermilk
- 4 Tbls of unsalted butter melted
- 5 ounces sharp cheddar grated (about 1-1/4 cup) plus more for sprinkling. I use Tillamook Sharp white cheddar that I grate.
- 2 ounces Parmesan grated
- 6 slices cooked bacon crumbled
- 1/4 cup chopped fresh chives or thinly sliced green onion
Instructions
- Preheat the oven to 350° F. Lightly grease an 8 1/2 X 4 1/2-inch loaf pan with cooking spray and line with parchment, leaving a 2-inch overhang on the two long sides.
- In a large bowl, whisk together the flour, baking powder, salt, and pepper. In a medium bowl, whisk together the eggs, buttermilk, and butter. Add the buttermilk mixture to the flour mixture and whisk to combine. Fold in the cheddar cheese, Parmesan, bacon, and chives. Transfer to the prepared pan and sprinkle with more pepper and cheddar cheese.
- Bake until golden and a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool in the pan on a wire rack for 10 minutes, then use the overhangs to remove from the pan and transfer to the rack. Serve warm or room temperature
