A delicious make-ahead recipe that you can freeze for later, then warm up to serve your family or guest.  That’s just good time management.  Gives you more time to spend with your friends and family instead of cooking.

Canadian Bacon Onion Quiche

TOTAL TIME:  Prep: 30 min. Bake: 40 min. + standing. YIELD: 8 servings.

Ingredients

  • 1 pre-baked deep dish 11” pie shell
  • 3 Tablespoons butter
  • 2 Tablespoons vegetable oil
  • 3 large sweet onions, sliced (about 6 cups)
  • 6 ounces Canadian bacon, diced
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 5 large eggs, lightly beaten
  • 1/2 cup heavy cream 
  • 1-1/4 cup shredded cheddar cheese
  • Dash of cayenne 

Directions

Preheat oven to 350°. 

In large skillet, heat 2 tablespoons oil over medium heat. Add Canadian bacon and brown slightly.  Remove to a plate. Add butter and onions; cook and stir until golden brown. Stir in Canadian bacon, pepper and 1/2 teaspoon salt. Remove from heat. Cool 15 minutes.

Lightly beat eggs, add cream and cheddar cheese. Combine with cooled onions and Canadian bacon.. Add dash of cayenne

Pour into pre-baked pie shell and cover crust edge to prevent over browning.Bake on a lower oven rack 40-45 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.
