Best Carrot Cake Ever

The best carrot cake recipe that’s moist and flavorful and makes a large quantity. Frost with White Chocolate Cream Cheese Frosting.

Total Time: 2 hrs 15 mins. Servings: 16. Yield: 2 10-inch round cake layers 

Ingredients

It’s always best to WEIGH your flour and sugar when making cakes.

  • 6 cups finely grated carrots
  • 1 cup brown sugar
  • 1 cup golden raisins
  • 4 eggs
  • 1 ½ cups white sugar(297g)
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup crushed pineapple, drained(squeeze to remove as much juice as possible)
  • 3 cups all-purpose flour(426g)
  • 4 teaspoons ground cinnamon
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts or pecans

Directions

Combine grated carrots and brown sugar in a medium bowl. Let sit for 1 hour, then stir in raisins.

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 10-inch round cake pans.

Beat eggs in a large bowl until light. Gradually beat in white sugar, oil, and vanilla. Stir in pineapple. 

Combine flour, cinnamon, baking soda, and salt in a separate bowl, then stir into egg mixture until absorbed. 

Stir in carrot mixture and nuts. Pour evenly into the prepared pans.

Bake in the preheated oven until an inserted toothpick comes out clean, 45-50 minutes. Cool for 10 minutes before removing cake layers from the pans; let cool completely.

While cake is cooling prepare White Chocolate Cream Cheese Frosting. Frost between layers and sides and top.

White Chocolate Cream Cheese Frosting

2.5 ounces(71g) white chocolate I use Callebaut white chocolate callets(chips). It’s a very high quality and melts easily in the microwave.

Ingredients

  • 10oz of cream cheese
  • 10 Tablespoons of butter
  • 1-1/2 teaspoons of vanilla
  • 3/4 teaspoon of orange extract
  • 5 cups confectioners sugar
  • 2 Tablespoons heavy cream

Melt white chocolate in microwave in 25 second bursts.  Stir briskly between each time. It wont take long. Mine melted after doing it twice. Stir until smooth and allow to cool to room temperature.

In a bowl, beat together the cream cheese and butter until smooth. Use a paddle attachment for stand mixer. 

Mix in white chocolate, vanilla, and orange extract.  Gradually beat in the confectioners sugar until the mixture is fluffy.  Mix in the heavy cream.
