Creamy Pesto Pasta with Garlic Shrimp
My sister-in-law made this for a get-together and it is absolutely delicious. Thank you Sharon for this recipe. Its very tasty and easy.
Prep time:15 minutes(not including peeling shrimp) Marinate: 20 minutes or more Cook time: 20 minutes(not including grilling shrimp Servings: 4-6
The Marinade
Ingredients:
- 2 pounds large shrimp, peeled and deveined
- 1 tsp paprika(I used Hungarian paprika)
- 1 Tablespoon sliced fresh garlic
- 1 teaspoon Italian seasoning
- 1 Tablespoon fresh lemon juice
- 2 Tablespoons olive oil
- 1/2 teaspoon black pepper
- 1 Teaspoon dried basil or 1 Tablespoon chopped fresh basil
- 1 Tablespoon brown sugar
Directions for Marinade
Mix all of the above ingredients in a bag and marinate a minimum of 20 minutes in the refrigerator. Remove the shrimp from the marinade and grill on high heat 5-6 minutes turning to char all sides.. Set aside.
Creamy Pesto Pasta
Ingredients:
- 1 pound of linguine or angel hair pasta, prepare per package directions
- 1/2 cup(1Stick) butter
- 1 Tbls garlic, minced
- 1/4 cup shallots, minced
- 2 cups heavy cream
- 1/2 teaspoon black pepper
- 1 cup fresh grated parmesan cheese
- 1/3 cup basil pesto(I used a little bit more)
- 2 pounds of the grilled shrimp
Directions For Pesto Pasta:
In a large skillet melt butter over medium heat. Add shallots; cook until shallots soften, 2-3 minutes. Add garlic and cook 1 more minute. Stir in the cream and pepper. Cook 6 to 8 minutes, stirring constantly.
Stir in parmesan cheese until thoroughly mixed in and melted.
Blend in pesto and cook 3 to 5 minutes or until thickened. Serve over pasta and shrimp. Garnish with chopped chives or fresh basil, chopped.
