PECAN TARTS

<strong>PECAN TARTS</strong>

Mini Bite Size Pecan Pies.   And just in time for the holidays.  These little morsels of goodness are great for Family gatherings and or parties.  

Ingredents

  • 3 ounces of cream cheese, softened
  • ½ cup (1 stick) butter (no substitutes), softened
  • 1 cup flour
  • 1 large egg
  • ¾ cup firmly packed brown sugar
  • 1 tablespoon butter
  • 1 teaspoon vanilla
  • ¾ cup chopped pecans, toasted(I don’t toast)
  • Mix the butter and cream cheese well by hand, gradually add the flour and continue mixing by hand until well blended. Chill one hour.

Shape flour mixture into 24 (1-inch) balls; press into ungreased miniature muffin pans, shaping each ball into a shell. Using the tart tamping tool saves a lot of time and shapes the pastry better

Stir together egg and next 3 ingredients; stir in pecans. Spoon into prepared tart shells. DO NOT fill above edges.

Bake tarts at 325 degrees for 25 minutes; cool for 10 minutes. Remove from pans; cool completely and store in an airtight container.

Note: This recipe can easily be doubled or tripled.
