SAVORY CRANBERRY SAUCE WITH RED WINE & THYME
Tangy and Sweet in that order is what I’m looking for in a cranberry sauce and this recipe provides just that. It is the perfect compliment to any turkey, chicken, or even pork on a fork. And as satisfying as this dish was to eat, it was equally satisfying to make. Call me crazy, but hearing those cranberries pop, and watching them meld into a thick sauce, was quite rewarding to me somehow. Please give this a try, I know you are going to love it.
MAKES:8 SERVINGS (2 CUPS) TOTAL TIME:30 MINUTES
INGREDIENTS
- ¼ cup minced shallots
- 1 Tbsp. olive oil
STIR IN:
- 12 oz. fresh or frozen cranberries
- ¾ cup packed brown sugar
- ¼ cup each dry red wine and balsamic vinegar
- 2 tsp. minced fresh thyme
- ½ tsp. black pepper
- Minced zest of 1 orange
- Pinch of salt
INSTRUCTIONS
- Cook shallots in oil in a saucepan over medium heat until softened, about 4 minutes. Add thyme and sauté
- Stir in cranberries, brown sugar, wine, vinegar, pepper, zest, and salt. Bring to a boil, then reduce heat to low and simmer just until cranberries pop and sauce thickens, 12–15 minutes.
- Let sauce cool before serving.
