I used a stand mixer for this recipe, but you can make these by hand. There are instructions for making these without a stand mixer.

TEXAS ROADHOUSE YEAST ROLLS – A COPYCAT RECIPE

Ingredients
  

  • 1 package 1/4 ounce active dry yeast
  • 1 cup warm 2% milk 110° to 115°
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 1/2 cup plus 2 tablespoons butter melted, divided
  • 2 tablespoons honey
  • 1-1/2 teaspoons salt
  • 3-1/2 cups bread flour 420gif dough is

Instructions
 

  • Dissolve the yeast in a glass measuring cup with the warm milk.
  • In the bowl of a stand mixer fitted with a hook attachment, combine the egg, egg yolk, 1/2 cup melted butter, honey, salt, yeast mixture and 2 cups of bread flour.
  • Beat on your mixer’s lowest speed for a minute, then increase to a medium speed and mix until a smooth yet sticky dough forms. Begin to gradually add the remaining flour (you may not need the full 1-1/2 cups) until a soft dough forms that pulls away cleanly from the sides of the bowl.
  • Turn the finished dough out onto a floured surface (or try kneading with a stand mixer). Knead until smooth and elastic, about 6-8 minutes. Then transfer it to a lightly greased bowl, turning it over once to grease the top. Cover and let rise in a warm place until doubled in size, about 1 hour and 15 minutes.
  • Punch down the dough and turn it out onto a lightly floured work surface. Divide and shape into 24 equal-sized balls. Arrange the balls in greased 8×8-inch baking pans (12 rolls per pan) and cover them with clean kitchen towels.
  • Let rise, undisturbed, in a warm place until doubled in size, about 1 hour. The time is entirely dependent on room temperature. You can place in the oven to rise . Place a pan of hot water in the bottom of oven. Turn light on oven and place dough on oven rack. Once risen remove from the oven.
  • Preheat oven to 350F. Bake until golden brown, about 20-25 minutes. Remove promptly and immediately brush the tops of each roll with the remaining 2 tablespoons of melted butter.

Notes

Tip: Take care to ensure your milk is heated to the proper temperature for optimal results. It’s a common baking mistake.. Milk that’s too hot will kill the yeast, while milk that’s too cold will not properly activate it. Most brands will recommend a temperature between 110-115°F. Use an instant-read thermometer to verify.
Editor’s Tip: For supremely fluffy Texas Roadhouse rolls with the perfect texture, we highly recommend using bread flour rather than all-purpose flour. Bread flour contains a higher protein content than other types of flour, which is essential for developing the gluten in this particular dough.
Tip: For best accuracy, we highly recommend using a simple food scale to measure your flour by weight when baking bread. Generally, 1 cup of bread flour should weigh 120 grams, meaning you should use about 420 grams of bread flour to prepare these rolls.
Tip: Just like meat, you can check a bread’s internal temperature to determine if it’s done. It should fall somewhere between 160 and 185º.

Storage
Rolls may be stored at room temperature for up to 5 days when wrapped tightly in plastic. You can also freeze Texas Roadhouse rolls for up to 6 months. Wrap tightly in plastic and place into a gallon-size freezer bag before placing in the freezer.
