Soaring Tree Cranberry Bars

It was a few years ago when we went on vacation with some very dear friends to Durango Colorado.  While there we went on an adventure called Soaring Tree Top Adventures.    Anyway, So you may have guessed this is a Zip Line tour.  The longest zip line tour in the country.   It’s located between Durango and Silverton Colorado.  The only way to get there is by Train.  The Durango Train.  Which added to the excitement.  I have been on zip lines but this was the most fun zip line tour we’ve been on. Certainly was one of the highlights of our trip.  Anyway, they provided a lunch cooked by a Chef on platforms way up in the tree tops next to the Animas River.  Very Cool!  Well, they provided us with Energy Bars they made there, and they were great.  They gave us the recipe.  And I can’t wait to share it with you.  So let’s get started.

Soaring Tree Cranberry Bars

Energy Bars that provide plenty of energy and taste. You are going to love these anytime.

Ingredients
  

  • 1 Cup Dried cranberries
  • 2 Tbls Sugar
  • 2 Cups All purpose flour
  • 1/2 tsp Baking Soda
  • 2 Cups Quaker Old Fashioned Oats
  • 1/2 Cup Sugar
  • 1/2 Cup Light brown sugar
  • 1 Cup Melted butter
  • 1 1/4 Cup Dried dates
  • 1 Cup Pecans
  • 1 1/2 Cup Caramel sauce

Instructions
 

  • Heat oven to 350F and lightly grease 9 X 13 pan
  • Mix together cranberries and 2 Tbls sugar and set aside
  • Combine flour, sugars, baking soda and Oats.  Mix well. Pour melted butter over mixture and mix until it is a crumble like texture. RESERVE 1 cup for topping
  • Press remaining mixture in bottom of pan and bake 15 minutes. Remove and top immediately with cranberries, dates and pecans over the baked bottom
  • Pour caramel over the top and then top with reserved topping
  • Bake for 20 minutes or until golden brown.
  • Let cool completely before cutting
