- 1 Tbl Vegetable Oil
- 1 Medium Onion Chopped
- 1 Celery Stalk
- 3 Garlic Cloves
- 2 Cans White Kidney Beans (cannellini) 15-19 Ounces
- 1 Cup Diced Carrots Small Pieces
- 6 Cups Chicken Broth
- 1/4 tsp Coarsely Ground Black Pepper
- 1/2 tsp Dried Thyme Or 2 tsp Fresh Thyme Leaves
- 2 Cups Cooked Chopped Chicken (Italian Sausage could also be used)
- 10-12 Ounces Spinach Chopped
- 1 Tbls Fresh Lemon Juice
- Freshly Grated Parmesan Cheese
In a 4 quart sauce pan, heat oil over medium heat. Add onion and celery, cook, stirring until the celery is tender 5 to 8 minutes. Stir, add garlic and cook 30 seconds. Add beans,broth, pepper, and thyme; heat to boiling over medium heat. With slotted spoon Remove 2 cups of beans to a bowl and reserve. Reduce heat and simmer 5 minutes.
Roll up, spinach leaves together, cigar fashion and thinly slice. Repeat with all the remaining spinach. Set aside.
Spoon 1/4 of the pot mixture into a blender, cover and purée until smooth. Pour into bowl. Repeat with the remaining mixture.
Return purée and reserved beans to the sauce pan; heat to boiling over medium high heat. Add chopped chicken. Add carrots and simmer for 10 minutes. Stir in spinach and cook just until wilted about one minute. Remove from heat and add lemon juice. Serve with Parmesan.
