Chocolate Chess Pie

Ingredients
  

9" Pre Baked Pie Shell Ingredients:

  • * 9” pre baked pie shell
  • * 1-1/4 cups sugar
  • * 3-1/2 Tablespoons unsweetened Cocoa
  • * 2 eggs lightly beaten
  • * 1-5oz can evaporated milk small can
  • * 1 teaspoon vanilla
  • * 1 stick butter 1/2cup, melted

11" Pie Ingredients:

  • * 11” pre baked pie shell
  • * 1-3/4 cups + 2Tablespoons sugar
  • * 5-1/4 Tablespoons unsweetened Cocoa
  • * 3 eggs lightly beaten
  • * 7-1/2oz evaporated milk
  • * 1-1/2 teaspoons vanilla
  • * 1 stick butter 1/2 cup, melted

Instructions
 

  • Preheat oven to 350F
  • Combine 2 teaspoons of flour and 2 teaspoons of sugar. Spread in the bottom of the pre baked, cooled crust.
  • Thoroughly mix the sugar and cocoa together, using your fingers to smooth out any lumps. Add beaten eggs, evaporated milk and vanilla. Whisk very well until smooth. Add melted butter and whisk until blended very well. Pour immediately into the pre baked pie crust.
  • Cover the crust edge with a pie ring to prevent over browning.
  • Bake 9” pie for 35 minutes or Bake 11” pie for 1 hour. Pie should be completely set. No jiggle
  • Cool completely then refrigerate. Usually overnight
