1 1/2cupsfinely diced Honeycrisp or Gala applesabout 2 medium apples
For the Apple Cider Glaze:
2cupspowdered sugar
1/3cup+ 2 tbsp apple cider or juice
1/2teaspooncinnamon
1teaspoonvanilla
Instructions
Preheat the oven to 350°F (175°C) and lightly grease a mini muffin tin with nonstick cooking spray, or see instructions for Fried Below.
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
In another bowl, whisk the melted butter and granulated sugar until well combined. Add the egg, vanilla extract, and applesauce, mixing until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Gently fold in the diced apples.
For Fried:
Heat the oil to 350F.
Spoon batter into hot oil and fry until crispy on both sides.
Place on cooling rack and brush with glaze.
For Baked:
Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
Bake for 12-15 minutes, or until a toothpick inserted into the center of a bite comes out clean.
While the bites cool slightly, make the glaze by whisking together the powdered sugar, cinnamon, vanilla and apple cider until smooth and slightly thickened.
Dip each warm apple fritter bite into the glaze, allowing any excess to drip off.
Set on a cooling rack to let the glaze set.
